[01:00:37:09 - 01:01:10:14] It's November the 1st, 2025, and it's the first time in a couple of days that I've been able to get out. There's been a lot of storms, even this far north in Canada. We do get some rainstorms and other storms relating to hurricanes and things like that that have been happening in the Caribbean. Hurricane Melissa has just gone through and exhausted herself. [01:01:11:20 - 01:01:16:13] This is the first day out, and it is cold. [01:01:17:20 - 01:01:20:22] It's cold and a little bit breezy. It's about zero Celsius. [01:01:22:13 - 01:01:28:20] It is 9.11am Eastern Standard Time, just for accuracy. [01:01:30:06 - 01:01:41:07] At the end of October, around about the 27th, I published another book, Carbohydrates and Diabetes. [01:01:42:20 - 01:01:53:07] We've all heard about keto diets, low-carb diets. That's the one that I prefer to follow, rather than the keto diets. [01:01:55:23 - 01:02:10:19] The idea is to cut out as much sugar as possible, and to cut out refined carbohydrates and all kinds of things that are made from refined carbohydrates. [01:02:11:20 - 01:02:26:08] I did look in the food offerings at my local coffee shop, and it was almost exclusively all highly refined carbohydrates and sugars. [01:02:27:17 - 01:02:35:19] Not very nutritious in the sense of a diabetic, or anybody for that matter, pre-diabetics. [01:02:36:20 - 01:03:00:00] Type 1 diabetics would probably stay clear for that anyway. The book is on carbohydrates. The objective of the book is to understand what carbohydrates are, to document them, and show you what they are, and where they crop up in your nutritional intake. [01:03:01:03 - 01:03:16:19] I also talk about the low-carb diet, and things which will help stabilize or reduce blood sugars, get the A1C blood test down, [01:03:17:20 - 01:03:23:00] along with exercise and being active. [01:03:26:11 - 01:03:37:13] Those are the primary things that helped me with getting off my medication and getting off my CGM monitoring and stabilizing my blood sugars. [01:03:38:20 - 01:03:52:14] It's important that we take into account the fact that carbohydrates are such poor nutritional sources, but they are nutritional sources that the body needs. [01:03:53:20 - 01:04:27:10] Consuming whole carbohydrates, not the highly refined versions that we're getting in breads and baked goods and pie crusts and similar, we do still need to consume some carbohydrates, and whole carbohydrates are the key to doing that, rather than all of the non-nutritious foods that are on offer.
